He is co-owner and renowned chef of the famed Blue Hill Restaurant in Manhattan as well as Blue Hill Stone Farms in Pocantico Hills, NY. His culinary acumen is legendary. He has found that crops dense with nutrients have the best flavor. Barber and his growers are all firm believers in remineralization of the soil – that is, the restoration of the broad spectrum of nutrients to soil to that it provides proper nutrition to crops.
